Tasty Tuesday: Ham Bean Kale Soup

This soup is AMAZING! Not only is it super fast to throw together, but it's really high up there on the heathly spectrum!
All you need is:
2 tsp - Olive Oil
1/2 - Yellow Onion
4 - Cloves of Garlic (minced)
2 - 8 oz Packages of Diced Ham (I like this kind)
2 - 16 oz Cans of Navy (or Cannellini beans)
1 - 16 oz Can of Italian Diced Tomatoes
4-6 cups - Chicken Broth
2-3 cups - Kale (stems removed & chopped)
Heat your olive oil and add onion and garlic. Cook until caramelized and fragrant.
Add diced ham and cook for about 5 minutes.
Stir in the beans and tomatoes.
Pour in the chicken broth and allow to simmer for about 5 minutes.
Toss in the kale and let simmer for another 5 minutes. Call everyone to the dinner table cause its done!
From start to finish, this soup takes about 20 minutes total to prep and cook. I like to eat mine with Jiffy cornbread (which takes 20 minutes to make), so you can have an entire meal done in no time.
